Blueberry Muffins

Mom's delicious blueberry muffin recipe. This recipe originally came from the Blacks, a family that lived across the street in a court where Dad grew up. Twila Black made these and, because Dad spent a fair amount of time over there as a kid, Dad ate them there a LOT. Nana got the recipe from Twila so she could make them for Dad. Unfortunately, they simply didn't taste the same. When Mom and Dad got married, the Blacks gave them the recipe for a wedding present. That's why you see the "not Jeff!" line in the recipe.

Ingredients
  • 3 Cups Biscuit Mix (Bisquick)
  • 1 1/2 Cups Sugar
  • 1/2 Cup Butter
  • 2 Eggs
  • 1 1/4 Cup Milk
  • 2 Tsp Vanilla
  • 14 Oz Blueberries
Instructions
  1. Preheat oven to 350 and line muffin tins.
  2. Mix biscuit mix and sugar.
  3. Add butter, eggs, and 1/2 of the milk. Beat vigorously. (The batter not Jeff!)
  4. Gradually stir in the rest of the milk and vanilla. Stir in blueberries.
  5. Pour into muffin tins, about 2/3 the way full.
  6. Bake 30 minutes until top springs back when lightly touched. Serve hot with butter.
