Tucker's Buttermilk Pancakes

Tucker's mom's buttermilk pancakes. Melt in your mouth good. This is the full batch and will make a lot. Half will serve 2-3 people comfortably.

Ingredients
  • 2 Eggs
  • 1/4 Cup Oil
  • 3 Cups Buttermilk
  • 1 Tsp Vanilla
  • 1 Cup Wheat Flour
  • 1 Cup White Flour
  • 2 Tbls Sugar
  • 1 Tbls Baking Powder
  • 1 Tsp Salt
  • 1 Tsp Baking Soda
Instructions
  1. Combine eggs, oil, and buttermilk in a large bowl. Mix until combined.
  2. Add in all other ingredients to the same bowl as the egg, oil, and buttermilk mixture.
  3. Mix all ingredients together until just combined. Do NOT over mix.
  4. Let batter sit for a few minutes until bubbles form. The batter will almost feel like foam.
  5. Cook over a griddle heated low to med-low.
  6. Serve with buttermilk syrup, whipped cream, and strawberries.
