Tucker's mom's buttermilk pancakes. Melt in your mouth good. This is the full batch and will make a lot. Half will serve 2-3 people comfortably.
Ingredients
- 2 Eggs
- 1/4 Cup Oil
- 3 Cups Buttermilk
- 1 Tsp Vanilla
- 1 Cup Wheat Flour
- 1 Cup White Flour
- 2 Tbls Sugar
- 1 Tbls Baking Powder
- 1 Tsp Salt
- 1 Tsp Baking Soda
Instructions
- Combine eggs, oil, and buttermilk in a large bowl. Mix until combined.
- Add in all other ingredients to the same bowl as the egg, oil, and buttermilk mixture.
- Mix all ingredients together until just combined. Do NOT over mix.
- Let batter sit for a few minutes until bubbles form. The batter will almost feel like foam.
- Cook over a griddle heated low to med-low.
- Serve with buttermilk syrup, whipped cream, and strawberries.
