Mom's famous Red Velvet cake. This Red Velvet Cake with cooked frosting truly is the BEST red velvet cake I've EVER had - even better than a famous bakery's! Ingredients
- 2 1/4 Cup Sifted Cake Flour
- 1/2 Cup Butter
- 1 1/2 Cups Sugar
- 2 Eggs
- 2 Tbs Cocoa
- 1 Oz Red Food Coloring
- 1/2 Tsp Salt
- 1 Tsp Vanilla
- 1 Tbs Cider Vinegar
- 1 Tsp Baking Soda
- 1 Cup Buttermilk
Instructions
- In a mixing bowl, cream butter and sugar until really fluffy, about 10-15 minutes.
- In a small bowl, combine eggs cocoa and salt. Stir to make a paste.
- Add cocoa mixture to butter mixture. Stir to combine.
- With the mixer on low, add the food coloring. Combine.
- Add flour and buttermilk, alternately. Beat on high (Kitchen Aid stand mixers on 6) for 5-10 minutes. (Time depends on your mixer)
- With a spatula, stir in vanilla and combine.
- In a separate mixing bowl, mix baking soda and cider vinegar; add to cake mixture. Carefully stir until completely blended.
- Pour into 2, 8 inch cake pans that have been greased, floured, and lined with parchment paper.
- Bake at 350 degrees for 25-30 minutes.
- Cool in pan on racks for 10 minutes. Remove, and cool completely before frosting.
