German, Danish (Pizza) Pancakes

Piping hot and puffy from the oven, this golden pancake made a pretty presentation for a skier's theme breakfast I hosted. Served with homemade buttermilk syrup, it's an eye-opening treat. Make several German pancakes if you're feeding a crowd, and keep in mind that my easy syrup tastes great on waffles and French toast, too.

Ingredients
  • 5 Eggs
  • 3/4 Cup Sugar
  • Pinch Salt
  • 1 1/2 Cup Milk
  • 1 Cup Flour
  • 1/4 Cup Butter
Instructions
  1. Preheat the oven to 400 F. Also, preheat the pan with the butter in it. (Mom melts the butter in the pan just before adding the batter to avoid burning the butter.)
  2. In a large bowl, mix together the first three ingredients and a pinch of salt. Add the milk and flour by alternating, slowly. (Mom adds 1/3 c flour, then half the milk, another 1/3 c flour, the rest of the milk and the last 1/3 c flour.)
  3. Bake for 25 minutes. Serve with syrup. If using a cast iron pan, bake for 15 minutes.
