This is enough for 12-14 chicken tenders so double as needed.
Ingredients
- 2 Chicken Tenders Per Person
- 1 Cup All Purpose Flour
- 1 Tsp Salt
- 1/2 Tsp Pepper
- 2 Large Eggs
- 1 Cup Seasoned Bread Crumbs Or Crushed Ritz Crackers
- 1/2 Cup Grated Parmesan Cheese (Kraft Ok)
Instructions
- Combine the flour, salt and pepper on a dinner plate. Beat the eggs with 1 Tbs of water on a second plate or bowl. Combine the bread crumbs and parmesan cheese on a third plate.
- Dredge the chicken tenders on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread crumb mixture. Press lightly to coat.
- Heat 1 Tbs of butter and 1 Tbs of olive oil in a large sauté pan and cook the chicken on medium low. Sear for about 3 minutes on each side or until golden brown and cooked through (165 F). Don't crowd the pan. Add more butter and oil as needed for the rest of the chicken.
- You can keep the chicken warm for about 15 minutes on a sheet pan in a 200 degree oven. Serve with a green salad and rice.
