Parmesan Chicken

This is enough for 12-14 chicken tenders so double as needed.

Ingredients
  • 2 Chicken Tenders Per Person
  • 1 Cup All Purpose Flour
  • 1 Tsp Salt
  • 1/2 Tsp Pepper
  • 2 Large Eggs
  • 1 Cup Seasoned Bread Crumbs Or Crushed Ritz Crackers
  • 1/2 Cup Grated Parmesan Cheese (Kraft Ok)
Instructions
  1. Combine the flour, salt and pepper on a dinner plate. Beat the eggs with 1 Tbs of water on a second plate or bowl. Combine the bread crumbs and parmesan cheese on a third plate.
  2. Dredge the chicken tenders on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread crumb mixture. Press lightly to coat.
  3. Heat 1 Tbs of butter and 1 Tbs of olive oil in a large sauté pan and cook the chicken on medium low. Sear for about 3 minutes on each side or until golden brown and cooked through (165 F). Don't crowd the pan. Add more butter and oil as needed for the rest of the chicken.
  4. You can keep the chicken warm for about 15 minutes on a sheet pan in a 200 degree oven. Serve with a green salad and rice.
