S'mores Cookies

Cass's version of Levain s'mores cookies

Ingredients
  • 1 Cup Cold Butter
  • 1 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 2 Eggs
  • 1.5 Cups Cake Flour
  • 1 Cup All Purpose Flour
  • 1/2 Cup Crushed Graham Cracker Crumbs
  • 1 Tsp Cornstarch
  • 3/4 Tsp Salt
  • 3/4 Tsp Baking Soda
  • 1 1.5 Cups Mini Marshmallows
  • 1 Cup Milk Chocolate Chips
  • 4 Oz Bar 60% Cacao Bar Chopped
  • 6 Graham Crackers Crushed
Instructions
  1. Preheat over to 375 degrees.
  2. In Kitchen Aid, cream together cold cubed butter, brown sugar, and sugar until creamy and beginning to be light and fluffy.
  3. Add eggs, one at a time, mixing well after each one. Scrape bowl frequently. Mixture should be light and fluffy and lighter in color.
  4. In a separate bowl, combine cake flour, AP flour, graham cracker crumbs, cornstarch, salt, and baking soda. (If you don't have cake flour, you can make your own by measuring 1 1/2 cups flour into a sifter. Remove 3 Tbs flour an replace with 3 Tbs cornstarch. Sift cornstarch and flour together into a bowl. The new mixture should be light and airy.)
  5. Add dry ingredients too wet. Mix until just combined to avoid overmixing.
  6. Add in marshmallows, chopped chocolate, milk chocolate chips, and crushed graham crackers. Mix until just combined.
  7. Separate dough into balls approx 2 Tbs in size. Place in a container and chill at least 30 minutes.
  8. Bake for 7 1/2 minutes. Cookies will appear slightly undercooked, and will continue to set on the tray after removing from the oven.
  9. *If you chill dough for more than a few days, let the dough sit out for 30-60 minutes before baking.
