This is a recipe from Nana, with a few modifications from the online recipe (adding the nuts and chilling the dough). I like it because it's got brown sugar in it. The corn flakes provide a nice crunch while the coconut and oatmeal make it chewy.

Ingredients
- 1 Cup (226g) Butter, Softened
- 1 Cup (200g) Sugar
- 1 Cup (200g) Brown Sugar, Packed
- 1 Egg
- 1 Cup Oil
- 1 Cup (80g) Rolled Oats
- 1 Cup (25g) Crushed Cornflakes
- 1/2 Cup (60g) Sweetened Shredded Coconut
- 1/2 Cup (63g) Chopped Pecans Or Walnuts (If Desired)
- 3 1/2 Cups (434g) Sifted Flour
- 1 Teaspoon Baking Soda
- 1 Teaspoon Salt
- 1 Teaspoon Vanilla
Instructions
- Cream together the butter, sugar and brown sugar.
- Add the egg and the oil. Mix well.
- Stir in the oats, cornflakes, coconut and chopped nuts.
- Add the flour, baking soda, salt and vanilla and mix well.
- Form into balls the size of a walnut; put on uncreased cookie sheet. Chill for 1 hour.
- If desired, flatten with a fork dipped in water.
- Bake at 325 degrees for 12 minutes. Cool for a few minutes before removing from cookie sheet.
